What is menu engineering? The four types of dishes
The four types
Stars sell well and earn well: keep and promote them. Plowhorses sell well but earn little: re-price or adjust the recipe. Puzzles earn well but sell little: promote them better. Dogs do neither: consider removing them.
What you need
How many of each dish you sold in a period, and the ingredient cost of each dish. The profit per dish is its price minus its ingredient cost.
How often
Review every few months, and after any big price change in ingredients.
